Potato Salad 01-May-2007
Ingredients:
1/4 to 1/2 cup sugar
1 tablespoon dry mustard
3/4 cup water
2 eggs
6 to 8 cups potatoes, cooked and diced
4 to 5 hard-boiled eggs
2 tablespoons cornstarch
1/2 teaspoon salt
1/4 cup vinegar
1 cup mayonnaise
Salt and pepper
Onions, diced or chopped
Parsley flakes
Directions:
Mix dry ingredients. Add eggs, water and vinegar. Cook until thick.
Cool completely, then add mayonnaise. Mix the potatoes, eggs, salt, then add mayonnaise.
Mix the potatoes, eggs, salt, pepper, onions and parsley flakes together and add sauce. This will keep for a week. |
