Last night, I didn't feel like cooking. Not really at all. Going out wasn't really an option as my wife has been sick lately.

I also didn't want the standard microwave schtuff either! I was hungry and no matter how much they promise, those microwave dinners really never fill you up. I decided on some shrimp scampi tossed in spaghetti noodles.

The scampi recipe calls for microwave gooking, but I like it much better cooking it up on the stove. After it's all done, I put some freshly grated parmesan cheese in the noodles and poured the entire shrimp scampi in and tossed it all around to coat the noodles evenly. Talk about tasty!

All in all, it took me 15 minutes to prepare the meal and less time cleaning up. The wife was happy, I got full, and we stayed at home!

Copied from blogs, read the original entry

Hi Mike , if there are any more nights of wanting something quick , warm and filling (that you can really put as much flovor in as you like) try cooking up some bay scallops in butter and lemon juice and throughing them in a pot of cambels cream of potato soup (follow can directions) then through in some garlic salt and lemon pepper and maby dried basel (you can really add to this alot or leave it simple with out having to look into the microwave in dispare for 5min while some sad salty mess is cooking)I agree those things just dont cut it.
