Mother's Day has come and gone. Since I don't have a mother anymore (mine died ten years ago) I try to visit my Grandmother in Tifton, GA. It's usually a relaxing visit that I enjoy.
She's not able to cook anymore. She's close to 90 and really can't spend time in the kitchen like she used to be able to. My best memories of summers at her house were of playing the backyard and coming inside to have chicken & dumplins or squash casserole. She also made the best pineapple upside down cake this side of the Mississippi! Oh, and cornbread! Don't even ask me to describe how moist and fluffy her cornbread was!
I just wish I could cook like my Grandma! |

| Saturday, May 05, 2007 (23:10:00) - Carraba's Feeds the Lex and Terry Fans |
Today, I went to the annual Lex & Terry Ticket to Ride. It's an event that raises money for the Autism Society of America. Each year 750 bikers gather together to ride in a big parade and then party with Lex & Terry.
There's always food as part of the registration for the event. This year Carrabba's from Jacksonville provided the food for the nearly 1000 people. It was pretty cool. The owners of Carrabba's donated the food and all of the employees that were there donated their time.
The food was good. Way better than that mass produced stuff I had at the Sub Ball the day before. The nicest thing about it was that I could go back for seconds! |

Last night I had the pleasure of photographing the Kings Bay Enlisted Submarine Birthday Ball. I have been photographing this event for the last two years. It's pretty much the same thing every time, a bunch of sailors and their wives/girlfriends getting together to enjoy fellowship, drink , and food.
The only thing is that the food has to be mass produced to please everyone at the event. It's safer to make the food decent, but bland. There's no real flavor kick when you go this route. That's too bad. I'm often left hungry and wanting for more.
Oh well, I guess I'll just have to put that food in my belly to sustain myself and then grab something more flavorful later. |

| Thursday, May 03, 2007 (12:00:00) - Sometimes, the simple meal is the best way to go |
Last night, I didn't feel like cooking. Not really at all. Going out wasn't really an option as my wife has been sick lately.
I also didn't want the standard microwave schtuff either! I was hungry and no matter how much they promise, those microwave dinners really never fill you up. I decided on some shrimp scampi tossed in spaghetti noodles.
The scampi recipe calls for microwave gooking, but I like it much better cooking it up on the stove. After it's all done, I put some freshly grated parmesan cheese in the noodles and poured the entire shrimp scampi in and tossed it all around to coat the noodles evenly. Talk about tasty!
All in all, it took me 15 minutes to prepare the meal and less time cleaning up. The wife was happy, I got full, and we stayed at home! |

| Yesterday, I met with the creative director of St Marys Magazine. It was a very informative meeting and he was very receptive to what I'm trying to do with Coastal Georgia Food. We might even be providing content for St Marys Magazine. Nothing is firm yet of course, and in the magazine business it isn't until it's in print. But, it was a very promising meeting. We're still a teeny baby of a website, but chugging along. |
